Sweet Potato & Carrot Fries

Yummy Beta-carotene, Vitamin A and Vitamin C boost

Ingredients

  • 1 Sweet Potato
  • 2 Carrots
  • Olive Oil splash
  • 1 tsp Cumin
  • 1/4 tsp Black Pepper
  • 1/2 tsp Sea Salt

Instructions

  • Peel (optional) and quarter the vegetables.
  • Preheat oven to 220°C
  • Mix oil & seasoning together.
  • Toss vegetables in the mixture.
  • Bake for 25-30 minutes.

Notes

I don't like waiting for food. So I steam my veggies first for about 5-7 mins, then I either bake them for 10 minutes or stirfry them - for me, it all tastes the same but without the wait.. but my way ends up a little more soggier than if I'm patient enough to bake it for 30 minutes.
