Miso "Eliminate a Cold" Soup or Sauté/Stirfry

Modified & combined several recipes to make an "Eliminate a Cold" soup (or stirfry). Just add water to make into a soup (see notes at the end).

Ingredients

  • 2-6 TBs Miso darkest you have on hand - 2TB for dark Miso, more for lighter Miso
  • 1 Large Knob of Fresh Ginger
  • 3 Cloves Fresh Garlic
  • 1/2 Medium Onion or Spring Onion/Scallions
  • 2 cups of vitamin-rich vegetables such as;
  • Broccoli or Cauliflower Chopped
  • Carrot Sliced or Diced
  • Cabbage Shredded or Diced

Instructions

  • Crush garlic and let sit for 5-10 minutes to bring out it's healthy enzyme; Allicin.
  • Slice Onion (as per your preference, thick, thin, or diced)
  • Dissolve Miso in 6 TBS of water or stock-water
  • Add 2TB of the miso-liquid to a wok, saucepan or frypan.
  • Sauté onion and carrots over medium-high heat, for 2 minutes, stirring continuously.
  • Add garlic and ginger. Continue to stir for 2 minutes.
  • Add broccoli (2 minutes)
  • Add 2 more TBs of Miso-liquid.
  • Add cabbage
  • After 2 minutes, turn off heat and stir in the remaining Miso.

Notes

To make soup:
Prepare exactly as above then stir ingredients into 1-6 cups of purified, boiling water. I add extra Miso paste and Soy Sauce for flavour as the water dilutes the flavours and it can get a bit bland.
Optional Variations:
Add seaweed, shiitake mushrooms, tofu, or tempeh (if you have on-hand).
Don't run-out to the store to grab everything when you are sick, use what you have on-hand - rest up and avoid stressful situations for rapid healing.
For extra Flavour & additional cold-fighting benefits add one of the following:
Fresh or Dried Thyme, Rosemary, Oregano or Coriander (Cilantro)
